That's not all GNU (that is, from the GNU Project) software.
perl and sendmail would be two good examples.

Since it's mostly from the GNU project, and it's shorter to write 'gnu' 
than 'software-with-licenses-that-are-more-restrictive-than-the-BSD-license',
that's why 'gnu' was chosen.
