IMAP is generally more load on your mail server, since it tends to be
used in "always connected" mode, rather than intermittant mode with POP.
On the other hand, this only matters if you have a lot of people using
your mail server-- for a personal mail server it just doesn't matter.

The UWash IMAP server is easy to set up, but gets bad press for being
a performance pig (again, for a personal mail server, who cares?).
Cyrus requires your email spools to go into maildir format, rather than
the standard Unix mailbox file format, but people generally seem to
like Cyrus a lot. I use the UWash server on my networks internally, but
as always YMMV...
