This third wire is the center tap of the 5K pot. It is use to limit the speed of a low speed EV which limits the pot to 2.5K. Also you could parallel the two end wires of the pot which will result in a 2.5K pot. Just cap off the center tap wire if you controller requires a 5K resistance. You could also connect the three wires to a ON OFF ON selector switch for two 2.5K circuits. One 2.5K is for normal use, the other is for a back up circuit if the first circuit fails. I am using two standard two wire PB-6 Pots, where I can switch out one pot if it fails to the other one with a dash mount selector switch.
