The problem with that is if one of your tapes is bad you're screwed.  If
you're depending of five or six tapes instead of one to complete a full
restore, the odds are much higher that you'll have problems.

Just wondering... would it be enough to make a "full" backup on say a weekly
basis and then an "incremental" backup on a daily/nightly basis?

Exclude the following folders from both "on-demand" and "memory resident"
file-level scanners: * The Exchange 2000 Server drive M. 
* Exchange databases and log files. By default, these are located in the
Exchsrvr\Mdbdata folder. 
* Exchange MTA files in the Exchsrvr\Mtadata folder. 
* Additional log files such as the Exchsrvr\server_name.log file. 
* The Exchsrvr\Mailroot virtual server folder. 
* The working folder that is used to store streaming temporary files that
are used for message conversion. By default, this folder is located at
\Exchsrvr\MDBData, but you can configure the location.  
* The temporary folder that is used in conjunction with offline maintenance
utilities such as Eseutil.exe. By default, this folder is the location where
the .exe file is run from, but you can configure where you run the file from
when you run the utility.  
* Site Replication Service (SRS) files in the Exchsrvr\Srsdata folder. 
* Microsoft Internet Information Service (IIS) system files in the
%SystemRoot%\System32\Inetsrv folder.

When a log file goes missing, and an Exchange Database is in an
inconsistent, or "Dirty Shutdown" state you have two options:
1. Recommended: Restore from Backup.
2. Last resort: Run eseutil /p on the database, then run eseutil /d on the
database, then isinteg -fix -test alltests

Running through step 2 multiple times is going to land you in more trouble
than you'd ever want to have, because eventually (probably sooner rather
than later) your database will be unrecoverable, and then ALL YOUR MAIL WILL
BE GONE FOREVER.

Just exclude the log file directory from your Antivirus product. There may
be other directories as well - others here will no doubt point you to them.
