So is your plan to reinstall and patch Exchange using the name of the existing server or to modify the AD attributes of the user objects to point them to a new Exchange server? Either works (more or less); each has its own set of issues.
Make sure you've made the other critical dependencies in your infrastructure equally redundant. As someone else mentioned you could have a second server and it may have the GAL on it and PF replication, but your mailboxes wont be there and if the first server fails, the users are not going to fall over to the secondary server. Pretty much a waste IMHO. There are some 3rd party programs out there such as DoubleTake that apparently some folks are using. Not me though. If I can offer you one piece of advise, it would be to make sure you use quality hardware.
