That sounds like plenty of capacity unless it's otherwise heavily loaded.

There's only around 35 mailboxes on it, private store is around 6.5gb.

I take the point about cached mode Outlook 2003 and running things over the
WAN, but it's only a 2mbps links.  IMHO as they already have good server
hardware the cost of an Exchange 2003 Server license isn't huge, so I'd want
to keep their mail local to them.

I'd appreciate any advice on the best plan of attack on how to deal with
their site.

I figured it made sense to have a single site from an admin POV - as you say
maybe I should think "mailboxes" more than "sites".  I guess another option
would be to put a temporary 2003 server in there as a member of our main
site, use the cross-site mailbox utils to move mailboxes to that server,
then reinstall current server/site into the main site - end result single
site?

How transparent does Exchange 2003 make a cross-site mailbox move though?  

TBH my main concern with the move server wizard is less to do with moving
the server and more to do with if everyone will need their Outlook profile
rebuilding and the "what happens with recipient containers" issue.
