The differentials don't truncate the transaction logs. By the end of the week you will have to make sure that you have plenty of disk space on the transaction log volume for all the logs since the last full backup. And be prepared for even more in case if the next full backup fails.
This may not seem like much, but in our environment we accumulate ~30GB worth of transaction logs between Friday night and Monday night (we don't do backups on the weekend). Also consider some extracurricular activities like moving a bunch of users from server to server or from one store to another - this will generate just as much transaction log data as the total size of all moved mailboxes. Additional overhead - fiddling with extra tapes when you need to restore Exchange and making sure you got the right tapes. And what if the right tape with the most recent transaction log data is somehow corrupted or damaged? I don't think you can beat full backup for the best protection.
