GC is only assigned the first site in a domain, any more and you have to
put the X in the check box all by your self. FSMO roles are another
thing you need to think about and of course DDNS,

You can make as many of your DCs into GCs as you want. Your
Infrastructure Master should not be a Global Catalog, though.
