"Server" installation. If I were to do that, would that let me set
up things such as DNS servers and Gateways? I just want my DNS and
Gateway to be 192.168.1.1.

http://www.linux-mandrake.com/en/demos/Networking/
has a couple of nice walk-throughs for setting up a Linux
box as a gateway/router/firewall, no need for server install.

If you want to run your own DNS you want to install the bind
rpm and maybe the caching-nameserver rpm, again no need for the
server install. I don't think a whole lot of the following howto but I
don't have a better link, http://www.linuxdoc.org/HOWTO/DNS-HOWTO.html
Linuxconf can be used to set it up and there are help screens. You
could also try setting it up from webmin but typically there are no
help screens.
