One of the greatest ideas that I have come across is having an outer cover for knit mittens. I have a friend who had some lovely leather mittens that fit over knit mittens with the knitted cuff exposed. And at one time I had a pattern from Cooperative Extension for making them from leftover fabric or old blue jeans. Never made them, the kids have pretty well outgrown the notion, but I still think of them and may one day make a pair for me (who feeds the animals that still remain). This would protect those wonderfully warm mittens.
