Most installers I have seen make a new Docs or Apps folder if it is
missing. I just move what they've installed to where I want it and
delete the new folder again.

FWIW The top level of my hard drive is arranged thus:

Sys Folder Applications Music/MIDI Apps
        Audio Apps
Utilities Graphics/Video Internet Games
Davids Data Elissas Data Hypercard
        Documents
Work Data Bonnies Data To Work Computer
        New Stuff

Apple would like me to group all my various types of Apps in the one
"Applications" folder, and all my data in "Documents", but I can't
see the point of adding an extra level to the hierarchy.

I have allowed the Documents folder to stay because iTunes seems to
like it. Everything else goes in my Data folders

Here is my tip - put an alias to your relevant data folder in the
folders of your most common Applications.

Then, on the alias, put a space in front of the name so that when you
choose open or close from the application (and if the application
chooses its own folder by default), your alias appears at the top of
the list - THen you jsut have to press return and you are where you
want to be.
