I believe the latency has more to do with the sound card than the software. I use 
Cakewalk Sonar 3 software for my setup and when I tried using midi with the 
soundblaster sound card that came with my machine, the latency was easily 2 to 3 
seconds. When I got the M-Audio Audiophile 2496 sound card, I was able to get the 
latency down to the 8 millisecond range with no dropouts. Newer sound cards/interfaces 
are able to go even lower. I suspect that with an upgraded soundcard/midi interface 
you can use the Cubase software you already have with good results. Good luck!

Sounds great ... how do I set them up to react to incoming Midi events in real 
time? Which VST host software would you recommend for this?

I tried Cubase SX 2.0 but there is a 2 second delay, so either I don't know
how to activate real time or maybe the VST instruments I am trying aren't
real time capable?
