More a comment on your previous post about old style typesetting, but you can use TeX on OS X with several editors to pump out to various formats including directly to PDF with pdftex/pdflatex. I think Alpha is the most popular, but by your comments in other posts, it sounds like you might cozy up to a 'vi' setup.
