Being a trumpet player and one who has already PLAYED the CHICAGO music book, you simply notate a plunger part like you would notate a stopped horn part using the + for closed sound and - for open sound. We trumpet players who have experience already know what that means. You would probably want to tell them to use a plunger for that unless it is too quick to get a plunger up in the players hands. There were some places where we used our hands instead because there was not enough rest time to prepare a plunger for a quick 1-2 measure part.
