Hmmm, I'm learning a lot about this stuff. I was just about to try
using a CD-RW to back up a variety of files. It might work for simple
retrieval, I assume.

Actually, even on a CD-RW it is not normally possible to remove or
change files. CD-RWs can be erased, but usually only completely.
The exception is packet writing software.
If you are on a Mac as far as I know there isn't any such software
available.
Considering the price of blanks it is hardly worth thinking about.
Just burn your CD again.
In any case, if you want a backup medium which can change or erase
files, I personally think a large external (Firewire or USB) harddisk
is
a good choice.

How does one delete files from a CD-R disc? I run an iMac.
You can't. CD-R (CD-Recordable) discs allow you to record information
on them, but no other file manipulation is possible. Except for
retrieval, of course. You need CD-RW (CD-Rewritable) discs in order to
remove or change files.
