FWIW, I found a pretty painless way to solve my beaming problem (which
is actually only one measure -- it's a musical example to be .eps-ed
into a text file)...
1. un-invisify the rests, restoring the secondary beams
2. convert the rests to notes
3. use the Toolbox/Custom Stem Tool to delete the stems of the
notes-that-should-be-rests
4. use the Toolbox/Note Shape Tool to delete the noteheads
Not particularly graceful, but for one bar, just fine.
