I can get to 'hide staff'' easy
enough but, it hides the fretboads also.

There is a Staff Style,
but I don't know whether it is defined by default in 2003 or not, called Hide
Staff.
In 2006, which I am using, there is an option called Hide Staff
in the Staff Attributes which accomplishes the same thing as unchecking
everything and 0 line staff, with fewer keystrokes.
