My comments are based on my own preferences and experiences playing chamber music.
If the piano starts on beat 3 of a measure of 3/4 time then do not put two quarter rests at the front of the measure. That marking indicates to the pianist that another player begins on the first beat. Absolutely do NOT use a whole rest in the other parts for the pick-up measure. This is confusing and misleading. Show only a quarter rest. The very best practice is to include cues for the leading part. In such beginnings invariably a discussion occurs such as "Who starts? I have 7 (14) measures out. What do you have in the first measure?" Using a whole rest gives no clue to the silent players as to what is transpiring in the piano part. Striving for clarity is a good thing! As for the measure numbers, I would not number the MM rests in the parts. Put the initial measure number on the measure where each player begins. As I understand the way your players enter that would be measure 8 for the violin and measure 15 for the cello. Again, strive for clarity.
