Even if one doesn't have perfect pitch, one tends to set the vocal apparatus for the pitches seen instead of the pitches to be produced. If I have to sing notation at a different pitch, particularly if it's more than a 2nd off, I'll do funny mental things with clefs to remind myself where I am. It's hard enough to make music without fighting the notation, which is why we do what we do.
