Sorry I can't be more helpful, but within one of the packages Gnome needs
(one of the gal-* ones? gtkhtml? sorry...) it seemed like there was a
bundled set of icons and graphics. The descriptions of those files don't
make it clear to me which [if any] is providing them, but I know I saw the
output go by while installing Gnome stuff a few weeks ago. For lack of a
clearer answer, it might help to install or re-install those (gtkhtml and
gal & gal-derivatives) until one of them, hopefully, fixes this. 

I didn't answer when you asked this before because I didn't know then and
I'm not sure now, but maybe this will at least get you started unless
someone comes along with a better answer...

Go into your /sw/fink/dists tree, find the "gnumeric.*info" file[s], and
look within it/them for a Depends line. This line indicates what a package
needs to work. If you're going to remove *all* of Gnome, then one part is
going to be GTK+ and a lot of graphical apps probably depend on it, at
least indirectly, but see for yourself to be sure.
