I don't know of a way to hide the MacOS menubar. To get XDarwin back, follow the instructions in
http://fink.sourceforge.net/faq/comp-packages.php#cant-install-xfree When you have XDarwin back, then you can indeed login as >console, with no password, to be able to launch X from the console.
