Glad it's working now.

Here's a brief summary of what went wrong before:

dselect only knows about the binary distribution
On the other hand, "fink install" only knows about the source
distribution, which has stable and unstable branches.  The two methods
actually don't communicate, so enabling the unstable tree only adds
package listings for "fink install".
