I first did a fink index, then gink list gnome-core:

i gnome-core 1.4.1-3 Common files for Gnome core apps
i gnome-core-dev 1.4.1-3 Common files for Gnome core apps
i gnome-core-shli 1.4.1-3 Common files for Gnome core apps

Moving the .info files reverted back to 1.4.1-3.

I did another fink selfupdate-cvs just to be sure; fink list did not report gnome-core as before. If I look in /sw, v2 .info is there:

/sw/fink/10.2/unstable/main/finkinfo/gnome/gnome-core-2.0.3-3.info

My /sw/fink directory contains:
10.2, which has in it a CVS directory containing Entries, Repository,
Root files, local, stable and unstable;
ChangeLog (dtd 1/16/03);
CVS (containing Entries, Repository, Root files)
debs
dists
inject.pl (file)
override (file)
README (file, I have read it!)
stamp-cvs-live (file)
stamp-rel-0.30 (file)
VERSION (file)

Gotta go teach!

Thanks for the help.

Let's verify whether that's the case: temporarily clear all the .info
files from your local tree, do a "fink index", and then "fink list
gnome-core".

Yes, and I just did it again. It still reports the older version
(unstable) of gnome-core.

fink list gnome-core reports

(i) gnome-core 2.0.3-3 GNOME convenience package
i gnome-core-dev 1.4.1-3 Common files for Gnome core apps
i gnome-core-shli 1.4.1-3 Common files for Gnome core apps

(is 2.0.3-3 the one in my local tree?)

Fink Commander reports only the binary and stable bundle-gnomes 1.4-13)
but fink list bundle shows:
