Attempting the evolution install or the fink update-all still attempts to update/install xfree86 and xfree86-shlib as below:

This seems to (my very uneducated eye) to indicate that DPKG things that xfree86 and xfree86-shlibs are in(stalled)?
Well, it says they are marked for installation, but are uninstalled. The only way I know for changing this selection state is via dselect:
Run "sudo dselect", then choose point 2 [S]elect
Navigate to the xfree86 and xfree86-shlibs packages and while they are highlighted, press "-" (minus-sign).
The quit dselect by hitting "Q" (capital Q) and return on Quit.
Then "dpkg -l xfree\*" should show a different status. See if this helps.
