I've done it and works great. Need to install the OS X developer tools
and then choose the gui bundle you want to run.

You certainly can do such a thing via Fink: installing the
'bundle-gnome' and 'bundle-kde' or 'bundle-kde-ssl' packages will
install everything you need to run GNOME or KDE, respectively.
