Questions similar to this have been asked enough that I finally wrote up
some of the history of X11 on OSX on the wiki here:

My recommendation is that while X.org 6.8 is technically better than
Apple's X11 as far as bugfixes and optimizations, the difference is not
significant enough that it's worth installing Fink's X.org over it. I'd
say stick with Apple's X11 (and X11 SDK) until X.org 6.9/7.0 comes out
and we can see what kind of improvements are involved.
