I would actually not recommend performing compiles in text mode, unless you redirect the output to /dev/null, or log in remotely, or similar. The OS X console is very slow to display text, which will end up slowing down the compile. I usually use GLterm (http://www.pollet.net/GLterm/) for monitoring long compiles because it's the fastest OS X terminal app by far.
