Having just installed and built tetex-2.0-5, I am having the same problem reported earlier of not having a pdflatex command (although pdftex -progname pdflatex does work, modulo other problems).

Following JF Merten's instructions, I tried:
do first a
dpkg -c /sw/fink/debs/tetex-base_2.0-5_darwin-powerpc.deb | grep 'bin/pdf.*latex'
to check that the links exist in your deb file, else rebuild the deb file too...

The grep came up empty, so I guess I need to build the deb file. How do I do that?

And where are those release notes? Are the installed somewhere with tetex, or do I need to find them somewhere on the web? I try to rtfm before asking silly questions, but when it's hard when I can't find it.
