I've just try to read the internal help in Gimp and discovered that no more images were visible.

Then in Console, I got this message:

libpng warning: Application was compiled with png.h from libpng-1.2.5
libpng warning: Application is running with png.c from libpng-1.0.12

This is a problem everybody was having for a while. It is generally believed that it goes away once you recompile the latest versions of libpng, libpng3, imlib, and in your case, gimp.

So, I'll guess I have to recompile Gimp, but how exactly should I do it,

fink rebuild gimp should be sufficient, but make sure that you have selfupdated and rebuilt libpng, libpng3, and imlib recently.

I should say that from time to time, fink selfupdate cvs leads to uninstall libpng3 in favor of libpng and the other way around. No idea why.

This is normal behavior, part of the "shlibs policy".
