Another option would be to install the new xfree86-4.4.0 release from the xfree86.org binaries. The version for MacOSX 10.2 is here:

I haven't tried this, but it would be interesting to see if it works with Fink's automatic x11-detection system, i.e. you remove all xfree86-related Fink packages (in your case probably only system-xfree86), install the new binaries (without Fink), and then fink-virtual-packages should show enough virtual x11 packages to make the rest of Fink happy.
