If you are using the 10.3 unstable tree there is package called
gnome-base,
described on fink's web page as follows

"GNOME Removal convenience package. This package doesn't install any
files 
of itself, it allows easy removal of GNOME."

I do not know how it works though, and I cannot investigate any further
at
the moment, it looks like my ibook needs a new logic board... :(
