Just call them and tell them what you want.  I have the polished Rodney
Red radiator in my 69 with their large single electric fan and relay.  I
had them install the temperature bung and sensor so it will
automatically turn the fan on.  All I needed to hook up was the power,
ground, and ignition wires to make it work.  It dropped my temps
considerably, and eliminated the runaway temperatures I was experiencing
during parades and cruising.  It's a great looking set up as well.  Here
is a side view of the radiator and electric fan/shroud as delivered.

I'm ready to order a radiator for my car. It's a 67 with a 69 400, and a
new 700r4. I looked through previous posts and saw that several
recommend the Rodney Red radiator and one someone mentioned to get the
electric fan setup too. However, when I looked at the rodney red
website, it does not show an available electric fan. They even go so far
as to say that the stock fan and shroud are more than adequate in most
applications. I have a new GM fan shroud, but don't mind unloading it if
I need to go electric instead, I just wanted to get a wider set of
opinions here. Also, I'll need to get everything from the pulley forward
if I go with a tradional fan, so what would you guys recommend?
