The fan should be "cut in half" by the shroud. Or not all the way out or
all the way in to take advantage of the cone effect that the shroud has.

180 is great, the 180 stat should keep you right there.

I think I need to sort out my fan (previous owner put a crap flexi fan
on) I have since put on a proper shroud but there is a lot of clearance
between the fan and the shroud.

What should the proper gap be ???

At mo it is running at about 180 ish with no thermostat, so with a 185
thermostat will it run hotter or just at this temp?

Yep, just plug 'em off. 

Most people will say the engine is most efficient at 195. If your
cooling system is good. It should be able to keep it there at 195 no
matter what. Kinda like you daily driver.
