Keyboard bindings are defined in
$FG_ROOT/data/keyboard.xml

where $FG_ROOT/ is the relevent path on your system. 
This:

<script>controls.centerFlightControls()</script>

Yes, I changed Nasal/controls.nas and it worked.
I only needed to comment out the elevator line
in  controls.centerFlightControls.

BTW, why is the default plane turning always to the
left (no winds) when the rudder/ailerons are centered?!
Even when I put the engine at minimum!
