Hello .. Mr/Mrs/Miss/Dude. You must have an ID-field that always stay the same, otherwise there is no chance that FME knows which objects that "are the same one". You set the UPDATE-fields in the output settings for each featuretype in your Workspace.

The problem I am having is that I cannot use UPDATE to do this, as the ObjectIDs will never match. How can I replace all of the recors in this feature class without re-creating it each time?
