Basically, the person will teach 1hr/week or so regarding the Linux and OSS in general and another person (who could be more technically adept) teach about programming/enterprise development in OSS 1hr/week. Regarding, the using Linux for practise, they could maybe use LTSP systems? Out of idea on that one. :( I was reading a book by Jason Clinton who wrote Ruby Phrasebook where it says that he does exactly the same (teach in a community school) besides being an sysadmin by day; does not mention anything about practical so I am assuming that the students in those classes have access to their own boxes/lab.
