There are a few listed on the PearPC site ( http://pearpc.sourceforge.net/about.html ) that emulates a powerpc g3 (ppc 750). It should be mostly the same as the xenon cpu, only with (a lot) fewer ALUs (so all the highly parallelized software that's optimized for the xbox will need to be spun out). Definitely a starting point.
Who wants to try to emulate the xbox's other hardware for pearpc?
