Was sie *wirklich* tun, weiß man nie genau, aber man kann sich ja die
Terms of Services genauer anschauen. Das ToS;dr-Projekt, an dem auch
ein
FSFE-Mitglied mitwirkt, hat das für GitHub schon mal getan:

Insgesamt wird GitHub dabei die Note B verliehen.
Zum Thema Datensammlung:

purposes: products and services provision, billing, identification and

Finde ich jetzt mal sogar recht positiv für einen Cloudservice. Denke
aber auch, dass deren Geschäftsmodell ja mehr aufs Anfixen für den
Businessbereich geht. Willst du "geheime" Repos: Hier Geld einwerfen.
