There are 256 sticks with eight chips which will be read as 128s on a Beige.

There are 256 sticks with sixteen chips which will be read correctly as 256s.

It is possible to "convert" high density chips so as to appear to be low 
density. OWC is currently using this technique on its 128 FPM sticks for 
pre-Beige Macs.

I have not found any incompatibility with "converted" sticks ... even on the 
VERY finicky Apple Network Server (ANS).

I don't know if anyone is offering "converted" sticks for G3s, but it is 
technically possible to do so.
