You want to run server-based email instead of using traditional POP3 clients that will download email to the computer's hard drive. No personal experience in this area, but there are about a zillion free web-based email systems (mac.com comes to mind) that only require an Internet connection and a Web browser. Additional benefit: Users could easily check email in the field as well.
