What I use is a composite A/V cable (I think that's what they call it ; on
one end it looks like a regular A/V cable -- yellow, red, white connectors
-- on the other end it looks like an earphone jack for a walkman).   Plug
the "earphone jack" end into the microphone port of the computer.  The
yellow, red, and white end can connect to the audio out port of your stereo
system.   

IF you don't have a stereo system that has the red and white audio out port
then you will need the adapter that has these ports on one end and an
"earphone jack" on the other (the IIsi came with one of these).  Plug the
adapter to the earphone port of the stereo.  Connect the red and white ends
of the composite A/V cable to the ports on the adapter.  Play your cassette
as you usually would.  The sound should be going to the computer.

*** What I noticed with mine is that I didn't get any sound coming from the
left channel when the red and white connectors were used.  I instead used
the yellow and white connectors and it worked fine.  Experiment with the
connectors till you get both channels working.

For software I used the demo versions of Sound Studio and Amadeus II, but
any good sound recording program will do just fine.  I believe Sound Studio
works in both 9 and X.  Just check to see what works in what OS.

For burning to CD any good burner and Toast works great.
