You know, it really does depend on what you're doing and what your expectations are. I have a 300Mhz beige G3 MT with 128MB of RAM and a 20 GB HD. I have 10.2.6 on it and am perfectly happy. I use Dreamweaver and Photoshop in Classic and have had no problems. If I need the floppy, which I rarely do, I just boot in OS9 and use it. I've had no problems with my internal zip.

I think that unless you're doing heavy graphics it's ridiculous to say that 256MB is not enough RAM. If you really need the advanced graphics capabilities (I mean really need it) then get a newer Mac with the money you would have spent on the upgrade. Considering how much good graphics software costs, if you have that kind of money to begin with, splurge on a newer machine!

If you had a bigger drive, I believe you'd have to partition it to 8GB anyway, so you're fine to add another drive, but you'll only be able to boot from this 8GB drive.

I was told that OS X doesnt support the internal floppy drive.

Yes. And why should they since no Macs have had floppy drives for a very (!) long time... ---
what about the internal zip and my external scsi cdrw?

Any other downsides or things that will become useless or inoperable?

It will work, but it won't feel very fluent...
