So if I install a 40GB EIDE 7200 ATA/133 in my Beige MT (266)

Replacing the 6GB running OS 9.2.2, and move OSX 10.2.6 from a 9GB SCSI
drive,
(so both OS's will be on the 40GB) Then what happens if I make the first
partition
8MB (for OS X), then it later needs more space to store applications?
You're screwed....
:)) No, seriously, there are some apps that you can efficiently run from another partition. It all depends on how you are going to use your Mac.
I guess I should be asking: If You were setting up a 40GB in this G3,
1.)How many
partitions would you set up
Probably 3, because of the limitations.
2.) What size of each partition for each OS,
You need to keep OS 9 on the same drive to boot into it, I've found. so it would be 8GB for OSX, prolly 6 GB for OS 9 (shouldn't need more than that and will need less in the future....) and the rest for apps and misc. storage....
3.) Would you copy 9 or X first from their present drives to the 40?
I wouldn't copy your systems at all, only the prefs and mailboxes, etc. A clean reinstall is always best....
Looks like this could be tricky!
Not really. But if I were you, because of the way things are going I would seriously think of trading up to get away from the beige limits. OS Jag rocks and there are literally hunnerts of apps out there now! :))
