Actually, in OSX a (properly assembled) application is contained within it's directory, which we see as the program icon in Aqua. Connect the two systems via Firewire Disk mode and drag from one disk to the other to copy.
Or you should be able to yank the programs out using Pacifist to get into the restore CD's.
