This is a sticky setting in the Office file dialog, btw. Another thing we have to deal with.
Also, for some gates-only-knows reason, copying from Excel into Mail results in an embedded .tiff file. Why? I've no freaking clue. One would think that a more useful default conversion would be into tab delimited text...
