The B&W would have around 1GB of RAM, one main OS drive and four 120GB disks connected to a PCI card and just be on all the time, possibly also used as a Carracho server and eventually a web server (when I get time).

Sounds like a plan to me. File and web service really isn't processor bound. Make sure it's running on a UPS; APC's systems even have OS X software included to shut down and reboot if the power goes off. Recommended for any and all, but especially server systems. Get the more expensive pro versions, they are better than the low end systems.

Don't forget backup strategies...you're looking at potentially backing up 480 GB of data somehow.

I feel that the MDD 2x1GHz is overkill (and financially silly) as
well as limited as I have to sit in the study, the *Book (haven't
decided between iBook or AlBook) will allow full mobility.

From other comments you've made, I suspect the Albook is the one you want.

B&W G3 300 rev. 1 (the ATA card solves the IDE bug) and I can
use it in OS 9 to scan on my old (but top end) AGFA scanner.

Get VueScan <http://www.hamrick.com> for that scanner to use it in OS X. VS is better than most of the scanner programs out there, other than Quicksilver and higher end apps like that.
