Thinking of replacing the original 10 Gb hard drive with a bigger and faster. Apple System Profiler states that it is an ATA/66 unit.
All new drives seems to be ATA/100 or ATA/133. Will they work? Are they downward compatible?
Yes they're fine, but your drive won't be much faster, since your interface is still ATA66. Faster drives will just slow down for the slower bus speed.
And what is the limitation on drive sizes, how much can the iMac see of a new 160 Gb or 200 Gb drive?
In that mac, there's a 137GB limit of which you'll see 128 GB. A larger drive is just a waste, get an external FW case for those.
