Run System Profiler.

If it says that the machine name is 'Power Mac G4 (AGP Graphics)' you have a Sawtooth, if it says 'Power Mac G4 (Gigabit Ethernet)' you have a Gig E.

Don't know where the motherboard rev # is stored, though.

Apple's specifications page has identifying information on it, iirc.
