I expect all of the Apple software that doesn't receive significant new versions in the near future will have updates that include universal binaries fairly soon (iTunes & iPhoto already have, along with everything that's included with the OS, obviously) - this includes pro software like Aperture & Logic and they will most likely be released as routine updates through software update with no charge.

Beside that, if you're using anything but the latest machines and depend on their full CPU power, you probably won't even notice that your apps are running under Rosetta. You'll have to take my word that it is blindingly fast and completely transparent (I haven't tested as extensively as Apple's labs, but I haven't found anything that doesn't work perfectly - in fact, Garageband running in Rosetta is faster it runs natively than on my mini!) in its more recent releases and will only get better with each update. Remember that system calls are not emulated - only the actual core functions of software will be run in Rosetta.
