Here's how you do it: select a section of the post you want to respond to, hit reply and only that section, along with your response, will appear. The rest stays in the thread and those curious enough can go back and read the entire post, should they wish. So, yes, trimming and bottom posting makes sense. Mail.app also has the option described above. And I don't think Dan was being snippy about it.
